Greetings to everyone. It has been a stretch of time since my last post, but I am glad that you are checking this out. Recently, I have been working on a project with bananas. Over the years, places I worked as a Chef required a need for bananas to be purchased regularly and be on hand. Unfortunately, I have seen far too many over ripened bananas get thrown away in a dumpster.
As a Chef, the goal is to operate with sustainability. In other words, how can we maximize utilization of food items to get the best return on the dollar and reduce refuse in our waste management systems? Even when buying bananas for home, the aim is to not waste money and consume them before they become too over ripened, or worse.
There are great options for dealing with aging bananas, such as freezing or adding to recipes such as baked goods. However, there is one method that had me curious to explore. Turns out, I discovered for myself one of the best ways to use older bananas, maximizing flavor and versatility. The technique I am talking about…is roasting bananas.
Roasted bananas are fantastic. It requires minimal effort to prepare and can be applied to a scalable amount of bananas. Best of all, roasting the bananas at a relatively lower temperature draws out more tropical flavors locked in the bananas, giving hints of mango and pineapple that elevate the natural banana flavor. And no worries about adding sugar since the aged banana is full of natural sugars. Additionally, roasting further develops perceived sweetness which will enhance the eating experience.
My roasting banana project began with the thought of creating a banana butter recipe. Since then, I thought of several ways to incorporate roasted bananas as a puree, not banana butter after all, in various recipe applications. The sky is truly the limit here.
The Magic of Roasting Bananas

Start by preheating your oven to 325°F (160°C). Remove only the tops of the bananas and place them on a baking sheet, leaving them in their peels, and roast them for about 50 minutes, or until 195°F (90°C) internal temperature is achieved. This will help the roasted banana puree retain proper color.
I also take the extra step of adding ¼ teaspoon of food grade Vitamin C to 1 pound (.45 kg) of roasted banana puree by weight.
